Mushroom Magic
As far as Mushrooms are concerned, it has always been a tasty and exotic affair. I remember the monsoon season in Goa, when the locally produced mushrooms, all soiled and dirty were sold on roadsides. And my Mum dishing out a spicy curry or mild stew with them.Mushrooms take in most of the flavours exuded by the ingredients mixed with, they make up for surprising experiences.
Just tried my hand at a different fare this time…and as mentioned it was a unique taste after all.
I had around 400 gms of button mushrooms.
A bunch of Scallions (Spring Onion)
Garlic cloves.6 -8 nos
And a few green chillies.
Use Olive Oil, say around 4 tablespoonful
Sauté the garlic cloves and finely chopped scallions.
Keeping the flame very low, sauté for roughly 2 mins and then add the mushrooms, chopped into 4 parts or fine slices.
Mix them thoroughly and sprinkle a little paprika powder, as per your taste. Keep stirring.
After 3-4 mins pour a little, (can be 5 tablespoonful) red wine,
A sprinkle of Oregano and salt …will pep it up…allow it to cook, on low flame, covered for approximately 5 mins or till mushrooms are cooked. Sign off with a pinch of freshly ground black pepper.
Add a dash of Soya sauce and Voila! Succulent and flavourful Garlic Mushrooms are ready to be gobbled.

It is best served as a starter. Nevertheless can spice up the regular Chapathi or Bread and Rice also.
